Strawberry Crepes

A quick and easy crepes recipe

Strawberry Crepes Ingredients:
1-1/2 C. milk 2 Tbs. Mexican Vanilla 1 Tbs. rum flavoring 3 egg yolks 2 Tbs. sugar 1 tsp. salt 1-1/2 C. (sifted) all purpose flour 5 Tbs. melted butter 1/4 C. vegetable oil (for brushing pan)

Strawberry Crepes Instructions:
Mix together Milk, vanilla and rum flavoring. Beat in egg yolks, sugar, salt and flour, adding the butter last. Beat for one minute. Pour into an airtight container and refrigerate for 2 hours. (can be stored overnight). Brush a 7 inch crepe pan or skillet with oil and heat on medium until pan is hot. Remove from heat and pour 2 Tablespoons of batter into the middle of the pan. Tilt the pan quickly so that the batter covers the bottom of the pan. Return the pan to the heat for one minute, then flip the crepe, cook for 30 seconds. Turn onto serving plate and keep warm in 180 degree oven. Serve with cut strawberries and fresh whipping cream for a delightful breakfast, brunch or dessert.
